Olli Soppressata Pepper and Garlic Salami is a robust salami seasoned with pepper and a hint of garlic. Made with vegetarian-fed heritage-breed (an original breed of pig that was the majority found on pig farms before the industrial agriculture boom. Heritage pigs haven't been crossbred, so they're fatter and their meat is juicier) pork raised without antibiotics, this slow-cured and string-tied salami is prepared according to an Italian family recipe handed down for four generations.

Soppressata, a pride of Calabrian culinary tradition, is one of the finest types of salami.  Salami can be traced back to the Roman Empire, where it was known as "salsum," or salted aliment. The meat was salted, or "cured," to extend its shelf life and ensure a steady supply all year. To make Soppressata, one should first pick only the lean cuts of a pig, and then cut it as coarsely as possible.
