Unlike the regular anchovies, Cantabrian anchovies are characterized by an unparalleled meatiness and umami flavor that seafood lovers find more appealing. Cantabrian anchovies are available only from March through June, making them a rarer kind that's wild-caught, cured, and prepared by hand.
