Pav Bhaji Masala is a blend of spices that include coriander, mango, red chilli, cumin powder, garlic, pepper, anise, cardamom, cloves, and nutmeg. It is a full bodied spice that is often used on vegetables! You may mix these spices with some vegetables and eat them with pao, naan or roti! From Maharashtra, you can find this popular dish on the streets!
To make Pav Bhaji: Boil 200g potatoes. Peel and dice. Also boil 150g dressed vegetables like carrots, cauliflower, peas, etc. In a deep frying pan, fry 100g finely chopped red onions in 60g of butter until golden. Add coarsely chopped 100 g tomatoes, salt to taste, and 15g of Pav Bhaji Masala. Transfer the boiled vegetables, 1 cup of water and on high heat mix and mash them for 10 minutes. Then apply butter on bread slices or slit baps, roast and serve together.MDH is the second largest spice producer in India.
