It’s then aged in wooden barrels until a decadent, syrup-like consistency and a full, well-rounded flavor profile are created. 

Balsamic vinegar of Modena is an IGP (Indication of Geographic Protection) certified Italian condiment, renowned for its quality, full-bodied flavor, and a tried and tested production process. Before hitting the shelves, it’s meant to be kept in wooden casks for at least 60 days and is labeled “invecchiato” - aged - if it stays in the cask for over 3 years.
