La Gruyere's story begins in Gruyere's mountains around the 12th century. As cows grazed in the Swiss Alps, local herders noticed that their milk got sweeter the higher the cows went on the hills. Consequently, they started bringing their cows to the mountaintops and set up mountain milking stations. This process results in an absolutely unique, potent flavor that is hard to replicate.
