Kolios Greek Kasseri Cheese is made with fresh pasteurized sheep’s and goat's (max 20%) milk. Very aromatic in flavor, Kasseri has a rich taste. With its semi-hard, melt in the mouth texture, it is one of the renowned Greek cheeses. Greek Kasseri Cheese has a PDO (Protected Designation of Origin) status, which guarantees that it is produced in its original place of origin, by traditional methods of production.
Believed to have originated in the 19th century, Kasseri cheese can only be produced in the Greek provinces of Thessaly, Macedonia, Lesbos, or Xanthi. Roughly made within only a few months, this cheese retains its smooth, “young cheese” texture. Like the Greek tradition dictates, Kasseri is hand stretched, kneaded and put into molds to ripen.
