Dark soy sauce is soy sauce that is aged longer than regular soy sauce and oftentimes has added caramel or molasses to deepen the color and taste. The aging process and molasses also lends to the soy sauce having a more full-bodied flavor. Commonly used in Chinese cooking and stir fry, you may have seen recipes calling for both light and dark soy sauce. Both soy sauce bring different depths of flavor to the table. Black soy sauce also is notably less salty than the other variants. Use dark soy sauce as an ingredient with rice dishes or other foods and as an ingredient to flavor dishes.
