I Mei Red Bean Jelly Yokan is a jelly confection made from sweet red beans paste. Also known as yokan, this thick jelly dessert is made from the paste of sweet red beans, or adzuki beans, agar, and sugar. It is typically molded into a square form and eaten in slices. In texture, it resembles less of jelly, and more of a gelatinized nougat. Popular in Japanese gift boxes, this treat was introduced to the Japanese by Chinese Zen Buddhists, where the gelatin in pork was replaced by the more humane agar substitute. Enjoy slices of this yokan or red bean jelly chilled with freshly whisked matcha or green tea as a midday treat.

Due to high quality of its products, such as pineapple cakes, green bean cakes, I-Mei soon became a well-known household name throughout Taiwan.
