Covap’s Dry Uncured Acorn Fed Iberico de Bellota Salchichon (no nitrates or nitrites added) is made exclusively with 100% black Iberian pig. The pigs are raised free-range with an acorn and grass-based diet. Their meat has a smooth buttery texture and delicately sweet flavor. This salchichon is uniquely silky and robust, with notable hints of black pepper and garlic that highlight the meatiness and sweetness in pork instead of overwhelming it.
Salchichon is a traditional Spanish sausage made from lean pork and pork fat. While similar to Spanish Chorizo, meat for Salchichon is minced more finely, and instead of paprika, it is laced with black pepper. Dating back to the middle ages, this staple was traditionally made on Spanish plains, whence constant breeze allows for an even curing process.
