Covap’s Dry Uncured Acorn Fed Iberico de Bellota Chorizo (no nitrates or nitrites added) is made exclusively with 100% black Iberian pig. The pigs are raised free-range with an acorn and grass-based diet. Their meat has a uniquely smooth and buttery texture and delicate yet robust, sweet flavor that truly shine in this chorizo, highlighted with smoky paprika, garlic, and cayenne.
Spanish chorizo is a traditional, fermented, salt-cured pork sausage from the Iberian Peninsula. Farmers fattened their pigs during warm months and slaughtered them in mid-November. Then, the newly acquired meat was cured, fermented, and stored all at once, ensuring a consistent supply of meat all year round. As this process continued, the farmers started generously lacing the meat with smoked paprika - something that evolved into a Spanish custom and gave the world one of its most renowned products - traditional Spanish chorizo.
