It is most ideal for pastries with long leavening times such as croissants, brioches, baba, puffs, krapfen, puff pastries, panettone, pandoro, or colomba.

It allows the dough to yield high levels of strength and elasticity. You may also use this bread to mold specific bread types such as loaves, baguettes, and in conjunction with other flours to make a strong bread, pizza or foccacia dough! Bread machine friendly!
