Penne is one of the few pasta types with an exact birth date. It was first made by Giovanni Battista Capurro, a renowned pasta maker from Genoa, in 1865, who even obtained a patent for a penne cutting machine. This cylinder-shaped pasta with angled ends has two main variations: lisce - with smooth surface, and rigate - a furrowed, ridged pasta.
