The Bergamot, a small yellow citrus fruit that is inedible raw, yields an essential oil in its rind. In 1850, at the suggestion of a perfumer, a candy-maker in Nancy combined the essence of Bergamot with sugar, creating the Bergamot of Nancy! To make the candy, sugar is heated over an open flame and is mixed with the essence of bergamot. Poured on a marble table and cut by hand, the Candy is a prized French classic.
