Cave Matured Roquefort Cheese by Societe is a moist and creamy goodness made with raw sheep’s milk. Displaying green veining, this cheese has a semi-firm body and a smooth texture. After 90 days of aging, the perfume of its blue mold aroma is well balanced by the richness of sheep milk. This product has a PDO, which implies it was manufactured by trained artisans in the French region of Roquefort's origin, using only local ingredients and traditional, age-old processes.

The history of sheep milk has unfolded mainly in the Mediterranean basin. Grazing in the pastures of Occitanie in Southern France, Roquefort cheese is exclusively aged in the limestone caves of Roquefort, whence the humid atmosphere contributes to its legendary blue veins.
