Mimolette Cheese is a traditional French cheese that is believed to have originated in Lille, France's northernmost city. When King Louis XIV of France prohibited the import of some foreign cheeses into France in the 1600s, lovers of Dutch Edam cheese began exploring alternatives. Lille cheesemakers allegedly began making their own cheese using the same basic recipe, with the addition of the fruit of the anatto tree, which lends this cheese its orange hue and a nutty, flowery scent.
