Camembert Soft Ripened Cheese from Le Chatelain is a creamy, silky Normandy cheese. This cheese is made using cow's milk and is soft-ripened to obtain its smooth interior and firm, white-mold exterior. Camembert is distinguished by its creamy, nutty, mushroomy, and fruity notes.
According to the origin tale of Camembert, Marie Harel, a farmer from the village of Camembert (in Normandy, France), first made this cheese in 1791. The legend has it that Marie once offered sanctuary to a priest fleeing the French Revolution from the town of Brie (home of famed Brie cheese), and the priest repaid her by entrusting her with the Brie cheese recipe. Allegedly, Marie tailored the recipe to the cheesemaking traditions of Normandy, giving birth to what is today known as Camembert. Camembert, while comparable to creamy Brie, is denser and less runny. Regardless of whether the genesis story is real, Camembert was indeed created in Normandy, and as a result, Normans take great cultural pride in it.
