Bomba is a strain of rice that matures slowly. Arrocerias Antonio Tomas grows its Bomba rice in La Albufera Protected Nature Reserve, a wetland of international importance. La Albufera is a freshwater lagoon and estuary on the Gulf of Valencia in Eastern Spain. Bomba rice more than doubles in size when cooked, and its main characteristic is the ability to absorb flavors while at the same time always remaining "al dente" or whole and loose. The grown rice produces a strongly dehydrated grain due to the long maturation period. Bomba rice is ideally suited for authentic Spanish paella. For example, Italian rice or Asian rice would produce a creamier or stickier than ideal paella, respectively.
What is D.O.P.? D.O.P. stands for Denominacion de Origen Protegida, or Protected Denomination of Origin. It is an EU designation referring to food products specific to a particular region or town conveying a particular quality or characteristic of the designated area. Among Spain's finest producers, you will see DOP a lot on their products.
