Asiago Cheese (aged 10 months) by Vantia comes straight from the Italian Alps. Cows that graze mountainous and lush pastures of the Trentino Region make rich, quality milk that makes this one-of-a-kind cheese. Having aged ten months, this cut has a mildly sharp, supple flavor. This product has a PDO (Protected Designation of Origin), which means it was made by trained artisans in the region of Asiago's origin, using only local ingredients and traditional, age-old methods.
Much like the invention of other types of cheeses, the discovery of Asiago came about as humans constantly looked for ways to store their milk to ensure its constant availability. Similarly, Asiago originated in the alpine area of Asiago Plateau, along the regions of Veneto and Trentino-Alto Adige, when the locals used the milk from cows (initially, it was sheep) who graze on the mountains to invent this Italian staple. This mountain cheese can vary by age. For example, Asiago Pressato is aged for just 20 days, giving it a more soft texture and a mild flavor.
