This product has a PDO (Protected Designation of Origin), which indicates that it was produced by trained artisans in the region of Gorgonzola's origin, using only local ingredients and traditional methods. The making of gorgonzola is a thousand-year tradition that may have originated (though this is still questioned) in the town of Gorgonzola in Milan. To this day, this product can only be made in Lombardy or Piedmont. After pasteurized milk has been heated until it curdles, it is blended with Penicillium roqueforti, a fungus/mold that aids in the ripening of the mixture. The mixture is then put into molds and placed in a cool area. Gorgonzola Piccante is kept to ripen for a month, whereas Gorgonzola Dolce (picante's sweeter counterpart) is kept for two months.
