It was around that time that Cristoforo Messirburgo first started making the Sopraffino vinegar - a blend of cabernet, merlot, raboso, and sauvignon, traditionally aged for at least 12 years - regarded today as the predecessor of balsamic vinegar! So Acetaia Ducale Estense soon turned what started with a private production of Sopraffino, into a successful business venture revolving around the production of wine vinegar.
