Chin-Chi Hsinchu Thin Rice Noodles Stick Vermicelli are thin rice noodles or vermicelli. These rice noodles are oftentimes cooked very quickly in boiling water or warmed in a bowl of hot water to soften and serve. These extremely thin rice noodles are from Hsinchu in Taiwan, which is an area of northwest Taiwan known for dry and windy conditions. These conditions make the rice noodles dry faster, and yield superior noodles for frying. Rice noodles are versatile and take on the flavor of whatever sauce you are using in your cooking very readily, often changing color to match the color of the sauce used.
