Hailing from the southern province of Bari in the “heel” of Italy, these Orecchiette from Marella are produced with a blend of organic, IGP-certified hard (durum) wheats. While industrially-produced pastas are typically made with Teflon-coated steel dies, Marella is extruded through a bronze die, giving a rougher surface texture that better holds sauce. Orecchiette, or "little ears," are a traditional shape from Puglia, most often served with a red sauce, capers, and anchovies.
