Schezwan sauce is a spicy, hot chili sauce mix that can be used both in cooking and for garnishing! Made of hot chillis, garlic, shallots and spices, you may even use this super popular indo-chinese staple as a dip! Popular Desi Chinese dishes such as Schezwan paneer, steamed fish with Schezwan sauce all include this sauce as the base! Indian Chinese cuisine, also called Sino-Indian Cuisine or Chindian Cuisine (Desi Chinese Food) was believed to have been developed by a small Chinese community that resided in Kolkata. The fusion of cultures yielded in an astoundingly delicious taste and went on to become popular all over India!


Schezwan paneer
Ingredients: 1 pack Ching's secret Schezwan sauce mix, 200 g paneer cubed, 1 capsicum diced, 1 onion diced, 3 tbsp corn flour, 450 mL (3 cups) water, oil to deep fry, chopped spring onion greens for garnishing.
1.Coat cubed paneer in corn flour and deep fry, keep aside.

2. Heat 2 tbsp oil in a wok on high flame, add the vegetables and stir fry for 1 min. 3. Add entire pack of ching's secret schezwan sauce mix to 3 cups of water and mix well.

4. Bring to boil and simmer for 2-3 minutes. For thicker gravy, simmer for 3-4 minutes.

5. Garnish with chopped spring onion greens and serve hot.


Steamed fish with Schezwan sauce
Ingredients: 1 pack Ching's Secret Schezwan sauce mix, 2 basa fish fillets, 8-10 coriander stems, 1 tsp garlic juliennes, 1.5 tsp ginger juliennes, salt and pepper to taste, lemon.
1.Clean, wash, and cut each fish filet in half. Marinate with salt, pepper, and lemon juice.

2. Steam fish - topped with coriander stems, garlic and garlic juliennes for 7-8 mins or until cooked. Remove coriander, ginger, and garlic.

3. Add entire pack of Ching's Secret Schezwan sauce mix to 3 cups of water and mix well.

4. Add this sauce mixture to a pan and bring to a boil. Simmer for 3-4 minutes.

5. Pour half the sauce in 4 serving plates and place steamed fish on top of it.

6. Pour remaining sauce over the fish and garnish with coriander springs.
