Garam Masala is a spice mix often featuring fennel, peppercorns, cloves, cinnamon or cassia bark, mace, cardamom pods, cumin, and coriander. Translated, Garam means "heating", to represent the Ayurvedic belief that the combination of these spices would heat the body, and Masala means mix of spices.

For Dam Aloo, a potato Kashmiri dish,

  1. Heat 3tbsp oil in a pan and fry 750 gm potatoes until deep brown in color.
  2. Prepare puree of 3 onions, 4 cloves and an inch of ginger.
  3. Heat another 4 tbsp of oil later add a pinch of asafetida, 1/4 tsp fennel seeds, puree and saute for 5-8 minutes.
  4. Add 200 gm of whisked yogurt and shallow fried potatoes to the pan.
  5. Add 3 tsp red chilli powder, 2 tsp cardamom powder, 1 tsp coriander powder, 2 tsp turmeric powder, salt for taste and 3 tbsp Badshah Punjabi Garam (gravy) Masala.
