French Chestnut and Mushroom Soup

Chestnut and Mushroom Soup


  • 1 Can Unsweetened French Chestnut Purée by Clement Faugier (Click here to get it now!)
  • 1 Liter Vegetable Broth made with Organic Vegetable Broth by Alce Nero (Click here to get it now!)
  • 3/4 Cup Sliced Mushrooms
  • Chopped Scallions
  • 1 Tablespoon Olive Oil 
  • Sea Salt
  • Black Pepper


  • Slowly combine chestnut purée and vegetable stock to ensure the purée is dispersed into the stock while boiling 
  • Add sea salt and black pepper to taste
  • Fry the mushrooms before adding them to the stock
  • Simmer on low heat for 10 minutes
  • Sprinkle some chopped scallions before serving
